
This is the first time I've posted a recipe (my own, too) so if I leave something out, forgive me. I made these for the first time last night and I love them! My brother made some a couple of weeks ago and they were eaten up so fast! He couldn't find the recipe he used so I just made my own. Enjoy!
about 30 small - medium size mushrooms (I used baby portobellos)
12 oz package of ground sausage (I used Jimmy Dean)
about 3/4 cup soft bread crumbs (I made my own in the food processor)
2 beaten eggs
about 1 cup shredded cheese (I used cheddar flavored rice cheese since I'm allergic to dairy)
onion powder
garlic powder
salt
Remove the stems from mushrooms and chop fine in food processor.
Cook sausage over med-high heat. Chop fine in food processor.
In a large bowl combine cooked sausage, mushroom stems, bread crumbs, 2 beaten eggs and cheese. Cook over med-low heat until thoroughly heated and cheese is melted.
Add onion powder, garlic powder and salt to taste.
Remove from heat.
Arrange mushrooms in baking pan or on a cookie sheet. Stuff with cooked mixture.
Bake at 375 degrees for 10-15 mins.
Experiment with different seasonings! I haven't had a chance to do it yet since this was my first time making them. I took some pictures of the finished mushrooms but none of them turned out. Just imagine that they look really good!
